The Outlaw (Cabernet Sauvignon)

Our Style of Cabernet Sauvignon is big, rich, layered, and delicious. We are looking to produce a bold wine that delivers flavor from start to finish but does not end with a bitter tannin bomb. Similar to how we make our other wines, we create these layers by utilizing different fermentation techniques, barrels, and yeast strands. We keep all of our components separate from one another until the final blending stage. We use a combination of new American, Hungarian, and French oak barrels and the final blend is typically around 70% new oak, which helps to create the richness and big mouth feel with a softer finish.

AVA

Dry Creek Valley’s grape-growing history goes back 140 years. The compact Dry Creek Valley American viticultural area (AVA) includes more than 9,000 vineyard acres and over 70 wineries, one deli, and no stoplights in an area only 16 miles long and two miles wide. Best known for its robust Zinfandel, and Cabernet Sauvignon wines, this rural wine region is located in north-central Sonoma County, just outside the city of Healdsburg.

Varietal

Cabernet Sauvignon is one of the world's most widely recognized red wine grape varieties. It is grown in nearly every major wine producing country. Cabernet Sauvignon became internationally recognized through its prominence in Bordeaux wines where it is often blended with Merlot and Cabernet Franc. For most of the 20th century, it was the world's most widely planted premium red wine grape until it was surpassed by Merlot in the 1990s. However, by 2015, Cabernet Sauvignon had once again become the most widely planted wine grape worldwide.
